Method
Boil noodles al dente as per the instructions on the pack. Run them under cold water and set aside.
Blend together all the sauces in a small bowl along with vinegar and sugar. Keep it aside.
In a wok, swirl around some oil and saute garlic, galangal and shallots for a minute.
Stir in your choicest veggies and fold in half of the sauce mixture.
Stir-fry veggies until you are satisfied with the softness, crispiness and texture.
Mix in rest of the sauce, saute for 1-2 minutes and serve with a garnish of basil or cilantro.
